Ingredients:

  • 3/4 cup sugar
  • 2 Tbsp butter, softened
  • 2 Tbsp light corn syrup
  • 1 egg
  • 3/4 cup milk
  • 1 cup flour
  • 1 cup wheat bran
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup blueberries

Directions:

  1. Preheat oven to 350 degrees
  2. In the bowl of a stand mixer using the paddle attachment combine the sugar, butter, corn syrup, egg and the milk mix on medium speed till combined.
  3. In a medium bowl combine the flour, wheat bran, baking powder and baking soda, add flour mixture to the wet ingredients.
  4. In a small bowl stir in 1 Tbsp of flour to the blueberries. Fold in blueberries to the mixture.
  5. Fill paper lined muffin tins 3/4 of the way full.
  6. Bake for 25-30 minutes or until a toothpick when inserted comes out clean.
