Irish Cream Chocolate Chip Cookie Dough

Ingredients:

  • 2 cups flour
  • ½ tsp kosher salt
  • ½ tsp baking powder
  • ¾ cup butter melted
  • ½ cup granulated sugar
  • 1 cup brown sugar
  • 1 egg
  • 1 egg yolk
  • 1 tbsp vanilla extract
  • 1 ½ cups chocolate chips
  • ¼ cup green M&Ms
  • ½ cup irish cream liqueur or non-alcoholic irish cream

Guinness Brownie Batter

Ingredients:

  • ½ cup butter at room temperature
  • 1 cup Guinness
  • 2 cups sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 ½ cup flour
  • 1 ½ cup cocoa
  • ½ tsp salt
  • ½ tsp baking powder

Directions:

  1. Preheat the oven to 325°F.
  2. Prepare the cookie dough by combining the flour, kosher salt and baking powder in a mixing bowl.
  3. In a separate mixing bowl, combine the melted butter and sugars.
  4. Blend well then beat in the eggs, vanilla and Irish cream liqueur.
  5. Next, add the flour mixture.
  6. Hand mix in the chocolate chips and M&Ms.
  7. Place the cookie dough in the refrigerator to chill while preparing the brownie batter.
  8. To prepare the brownie batter, cream the butter, Guinness and sugar together in a large bowl.
  9. Add the vanilla and eggs, and combine.
  10. Mix the cocoa, flour, baking powder and kosher salt together in a separate bowl.
  11. Add the cocoa flour mixture to the butter sugar mixture and blend well.
  12. Spread the brownie batter into a 9 x 13 baking dish sprayed with cooking spray.
  13. Remove the cookie dough from the refrigerator and spread on top.
  14. Place in the oven to bake for 50-55 minutes.
