For The Tart Crust

Ingredients:

  • 1 stick unsalted butter, melted
  • 2/3 cup sugar
  • 1/4 tsp salt
  • 1 1/4 cup flour

Directions:

  1. In a medium size mixing bowl combine the melted butter, sugar, and salt.
  2. Add in the flour and combine well.
  3. In a 9" tart pan with a removable bottom, evenly spread dough along the bottom and up the sides.
  4. Cover with plastic wrap and place in fridge for at least 1 hour.
  5. Preheat oven to 375 degrees.
  6. Bake the tart shell for 10-15 min or until golden around the edges, let cool completely

For The Tart Filling

Ingredients:

  • 12 oz cream cheese softened
  • 2/3 cup sugar
  • 1 cup heavy whipping cream
  • 1 cup cool whip topping, room temperature
  • 1 14oz can mandarin oranges, drained.

Directions:

  1. In a stand mixer using the paddle attachment combine the cream cheese and sugar and mix on high till light and creamy, stir in mandarin oranges.
  2. In another large bowl that has been chilled in the freezer for about 15 min using a hand mixer mix on high speed until stiff peaks form, fold in the whipped topping.
  3. Combine the whip cream mixture into the cream cheese mixture and fold gently together.
  4. Pour into prepared baked tart crust, Let cool in fridge for at least 3 hours.
