For the Mango Salsa

Ingredients:

  • 1 red onion, diced
  • 1 roma tomato, diced
  • 1 mango, diced
  • 1/4 cup cilantro
  • 2 tbsp olive

For The Pork Chops

Ingredients:

  • 4 bone-in pork chops
  • 1 1/2 tsp pepper
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp ground cumin
  • 1 tsp paprika
  • 2 tbsp olive oil

Directions:

  1. In a medium size bowl combine the red onion, tomato, mango, cilantro, and olive oil. Refrigerate while you make the pork chops.
  2. Whisk together in a small bowl the pepper, garlic powder, cumin, and paprika.
  3. Pat the pork chops dry with a paper towel and rub the spice mix on both sides of the pork chops.
  4. Heat the olive oil in a large skillet on medium high heat cook pork chops for 5 minutes on one side, turn over and cook for another 5 minutes, or until internal temperature reached 145.
  5. Serve pork chops with the mango salsa.
