  • Melt 2 tablespoon butter over medium-low heat in a nonstick skillet.Add eggs to blender and blend until eggs are pale and increased in volume, 30 seconds.A

Ingredients:

  • 2 tablespoon butter
  • 6 eggs
  • 4 teaspoons chives
  • 4 teaspoons cream cheese
  • Salt and freshly ground pepper to taste

Directions:

  1. Melt 2 tablespoon butter over medium-low heat in a nonstick skillet.
  2. Add eggs to blender and blend until eggs are pale and increased in volume, 30 seconds.
  3. Add eggs to skillet. Let eggs sit until just set, about 30 seconds.
  4. Cook, stirring constantly, until eggs are almost set but still runny (3-4 minutes) and remove from heat.
  5. Add cream cheese (or milk or cream) and stir until melted and incorporated into the eggs and eggs have finished cooking, about 1 minute.
  6. Add chives and season with salt and pepper. Serve immediately.
